Explanation of pancakes
Denmark Dino-Aebleskivers

Use an Aebleskiver Pan. The key is to have an Aebleskiver skillet that allows you
to make these little pancake puffs. The dinosaurs had fun flipping them over with a
chopstick when they ate them! A small spoon, chopstick, or a spatula can be used
to flip them.
Serves: 4
Prep Time: 15 minutes
Cook Time: 20 minute
Ingredients:
● 2 cups flour of choice (I used wheat flour)
●
1 ½ tsp sugar
● ½ tsp baking soda
● ¼ tsp salt
● 1 tsp baking powder
● 2 large eggs separated
● 4 Tbsp melted butter
● Butter or oil of choice for the pan ( or a baking spray)
● Filling of choice (if desired to have a filling, otherwise no filling is needed)
Fillings can be mini chocolate chips, jam of choice, or diced small apples.
● Powdered sugar for dusting once fully cooked
Directions:
● In a larger mixing bowl, combine the flour, sugar, baking soda, salt, and
baking powder. Mix together.
● In a separate bowl, combine the egg yolks and melted butter.
● Pour the wet ingredients in with the dry ingredients and mix together.
● In a clean bowl, beat with a mixer the egg whites until stiff peaks form.
● Fold gently the egg whites peaks in with the other ingredients and combine
gently, maintaining as much air as possible.
● Warm the Aebleskiver pan over medium heat, and add a small amount of
butter (or oil or cooking spray) into each hole.●
Pour batter ⅔ way into each hole. Allow to cook until bubbles form and
check the underside of batter is golden brown. Do not over-cook. When the
underside is golden brown, this is where you “flip” onto its side and if using
a filling, place the filling in now. If not using a filling, continue the “flip” for
the other side to cook a couple minutes or until golden brown also.
● Remove round/oval pancakes from the pan onto a plate.
● Dust with powdered sugar and serve with topping, or a side of choice
(optional)
