Dino-Tlayuda Pizza (Mexico)

This pizza is a fun way to make a delicious meal when you’re craving something different than tacos or enchiladas. You can make it as spicy or unspicy as you would like. Either way, it’s awesome and it is on weekly repeat in my house. It is baked on a baking tray, so no need for a pizza peel or stone.

Mexico

Prep: 20 min         Cook: 15 min          Total: 35 min

 Serves: 4 individual tortilla pizzas

Ingredients:

4 Medium tortillas - your choice

8 ounces Mexican chorizo - cooked, crumbled or cooked and sliced (optional)

1 (15 ounce) can refried beans - black or pinto bean

4 ounces cheese - shredded (Oaxaca or Monterey or Mozzarella)

2 cups green cabbage, thinly sliced or shredded

2 medium tomatoes - sliced thin

2 avocados - sliced thin

2 limes - sliced in wedges as a side

Directions:

  • On a flat baking sheet pan, line with foil or parchment paper

  • Place tortilla(s) on the pan - however many will fit the pan (I make 2 at a time)

  • Top ½ of each tortilla with: a thin layer of refried bean, about 2 ounces of the cooked chorizo, sprinkle about 1 ounce of the cheese, about a ¼ cup of the cabbage, about 2 slices of tomatoes

  • Fold the tortilla(s) in half

  • Broil on low for about 2-5 minutes, or until crispy on the outside, crunchiness desired

  • Place the avocado slices on the top (or inside) and sprinkle the lime juice to taste

  • Enjoy your Dino-rific Pizza!

Option:

Keep the tortillas open on the baking sheet pan. Layer all the ingredients, except the avocado, thinly, leaving about a ½ inch from the edge of the tortilla. Broil tortillas(s) for about 3 - 5 minutes, until the edges are crispy. When the tortillas are out of the oven, place the avocado on top, and sprinkle lime juice to taste. Enjoy!
