This is a fun sweet pancake recipe perfect for relaxing mornings for breakfast, or as a mid-day snack. A good friend of mine, Michelle, says these hot cakes remind her of her childhood snacks and bring back great memories. This recipe is dedicated to Michelle, Joe and their children. We have the most amazing and delicious food when Michelle is cooking!

*Serves: 15 individual hot cakes. *Prep Time: 5 minutes.
*Cook Time: 20 minutes
Ingredients:
2 ½ cups all purpose flour (flour of choice is good)
½ cup brown sugar
2 teaspoon baking powder
¼ tsp salt
2 ½ cups full cream (or whole milk, plant-based milk, water, or evaporated milk)
2 large eggs beaten
½ tsp vanilla
2 teaspoon vegetable oil - for the pan. Additional oil may be needed
¼ cup granulated white sugar - for the toppings
¼ cup softened margarine - for the toppings
Directions:
●In a large bowl, mix together the flour, brown sugar, baking powder, and salt. Make a ‘well’ in the flour mixture for the wet ingredients next.
●Pour the milk, beaten eggs, and vanilla into the flour mixture. Use a hand mixer to combine and set aside
●In a pancake griddle pan or fry pan, heat oil on medium-low
●Scoop about ¼ or ⅓ cup of the batter onto pan to make small to medium circles (I made smaller ones with 50ml batter also)
●When the batter bubbles on top, flip and cook on the other side; about 3-4 minutes depending on your pan. Continue until all the batter is done.
●Spread the margarine on top of each hotcake while warm. Sprinkle a pinch of the granulated sugar on top and serve immediately. Maple syrup or berries can be served as a topping too.
●Enjoy your Dino-rific pancake! As adapted from Simply Bakings.
